Once a 19th-century saddler’s shop and later a butcher’s complete with an underground cellar, this space has been thoughtfully renovated to preserve its colonial-era character while offering the contemporary comfort our patrons love. Today, we blend that historic charm with a modern passion for precision and bold flavours.

The building currently housing The Proprietor café at 459 Townsend Street in Albury is one of the city’s earliest commercial structures, with its original foundations laid before 1890.
It was initially constructed as a saddlery, serving the needs of horse-reliant residents and travellers in the late 19th century. Subsequently, the building was adapted for use as a butcher’s shop, complete with an underground cellar that provided cold storage for meat before mechanical refrigeration became available.
Throughout its long history the premises have undergone multiple renovations and façade changes, reflecting shifts in use and ownership, while retaining its place in Albury’s commercial precinct.
In recent years, the building has been restored and repurposed as a contemporary café and eatery, known as The Proprietor. The current fit-out integrates recycled and handcrafted elements, blending historic fabric with modern design.

In the past 10 years l have been so privileged to work with many fun and incredibly talented people, who made even the busiest and hectic days enjoyable. I'm also grateful for all of our lovely customers.
